Quarantine Recipes – Turkish Chicken Kabobs

While we practice social distancing, many are stuck at home, cooking and eating while perusing social media. There’s time to do more in the kitchen than usual, so we asked our staff to share some of their favorite Quarantine Recipes. We will be posting them here in the coming weeks and hope they help fill both time and stomachs.

I found this recipe in January while visiting Istanbul, Turkey, and I have been craving it ever since! Their food was so fresh and yummy that I could literally eat it for every meal.

I tweaked some ingredients to try and find that same excellent Turkish taste and this is perfect. 

Ingredients

•        2 boneless, skinless chicken breasts (or 4 to 5 boneless, skinless thighs)

•        2 zucchini

•        2 squash

•        2 orange or red peppers

•        1 cup brown rice

•        1 medium onion

•        2 cloves garlic

•        1/2 cup plain yogurt (or milk)

•        3 tablespoons vegetable oil

•        2 tablespoons tomato paste

•        1 teaspoon ground black pepper

•        1 teaspoon paprika

•        1 teaspoon salt

•        Garnish: oregano, sumac, and paprika

Instructions

Cube chicken, slice squash and zucchini, and place in separate bowls.

Mix all spices together in a separate small bowl.

Drizzle olive oil onto chicken and veggies so the spice will stick. Then take spice bowl and distribute half into chicken and half into veggie, and mix together so it’s totally coated!!

I use skewers and a grill to get my veggies and chicken all nice and cooked. Normally takes about 10-15 minutes depending on if you like them a little crispy or not.

Option—Use boil-in-bag brown rice to serve with the chicken.
